Ingredients
For Rasagulla
- Milk 4 cup
- lime juice 2tbs and water 1tbs(mix both)
- 1 and half cup sugar
- 4 and half cup water
- Cardamom powder 1tbs
- Milk 4 cup
- condensed milk 1 cup
- sugar 1-2cup(as u required)
- cardamom powder 1 tbs
- chopped pistachios 2tbs
- chopped badam 2tbs
Procedure
- For Rasagulla:
Boil the milk thoroughly and make the flame sim .Now slowly add the lime juice mix into the milk and the milk gets curdled. Now filter the paneer using a white cloth and stain the water fully from it,also u can show the paneer to cool water to stop curdling.Wrap the paneer cloth, rinse under cold water, and squeeze well. This process takes out the sourness from the lemon.To take out the excess water squeeze the cloth. Taking the right amount of water out of the paneer is the most important part of this recipe.To check if enough water is out of the paneer, take a little piece of paneer on your palm and rub with your fingers. After rubbing the paneer for about 15-20 seconds, you should be able to make a firm but smooth ball.Then take the paneer out, make a dough like chapathi dough by knead it well for 10 mins.Once it done make small size balls from it.
Take another deep bottomed vessel and add water , sugar ,cardamom powder and let it to boil. keep stirring till sugar dissolves completely. When the sugar syrup boils and starts bubbling, add the balls slowly one by one and simmer it for 3mins.The balls will go to the corner, move them to the middle. Keep in medium flame and close with a lid. Cook for 10mins . After 10 mins, the balls would be doubled in size. Rasagullas are ready now and set it aside to cool.
