Kinnathappam Dessert

  Traditional dessert for Eid special. As we are nearing the Eid ul adha, this going to smell in all our home. 

A delicious white cake
Ingredients

  • raw rice(pacha arisi used for making aapam)- 1 cup
  • thick milk- extracted from one full coconut(1 cup)
  • 2nd and 3rd milk-2 cup(combined)
  • egg 1
  • sugar 1 cup
  • ghee 2tbsp
  • cardamom crushed 3
  • cumin seeds halfspoon

Method

  •  Soak the rice in hot water for 15 mins , then put the rice in cool water for 2-3 hours.Grind the rice by adding 2nd and 3 rd coconut milk.
  • Grind it well until the batter becomes very smooth,then add 1st thick coconut milk,egg,sugar and grind again until it mix well, the batter should not be too thick.
  • Main thing is to sieve the batter using fine cloth(cotton cloth) and grind it again.
  • Take the cooker plate or any shallow wide silver plate,coated it with ghee and pour the batter into it,sprinkle the cumin seeds and crushed cardamom over it.
  • Steam cook the batter.Here I am using the pressure cooker, you can  use your own method to steam cook.
  • Keep any silver stand or vessel into the pessure cooker and pour water into the cooker.Once water gets heated place the batter plate over the stand and close the pressure cooker and wait for one whistle.
  • After the pressure has released, kinnathappam can be taken out.
  • The appam may look like uncooked and sticky on touch. But it will solidify upon cooling. So try not to cut while it is hot. 
  • Once it has cooled, cut into desired shapes and serve.
