Pulikari
Ingredients
- Cooking Oil -3tbsp
- mustard seeds-1tsp
- cumin seeds-1tsp
- fenugreek seeds-a pinch
- dry red chilli - 2
- curryleaves-2tbsp
- sliced onion-1 large
- chopped cucumber -1/2 cup
- chopped brinjal-1/2 cup
- capsicum -1/4 cup
- green chilli -1
- turmeric powder -1/4 tsp
- red chilli powder-1/2tsp
- sambar powder-1tsp
- cumin powder -1/4 tsp
- tamarind water-1/2 cup
- salt to taste.

Method
- Heat a fry pan and pour oil.After oil gets heated add cumin seeds,mustard seeds, fenugreek seeds,curry leaves,dry red chillies.
- Then add onion,greenchilli and saute it well until it become light brown colour.
- Add all chopped vegetables ,turmeric powder,chilli powder,cumin powder,sambar powder,salt,small amount of water to cook vegetables.
- Close the pan till the vegetables cook completely.
- Once the vegetables are done,add the tamarind water and allow it to cook until the kari becomes thick.
- Transfer the pulikari into the serving bowl.
- Best side dish for coconut rice and ghee rice.
