Pulikari

 Ingredients

  • Cooking Oil -3tbsp
  • mustard seeds-1tsp
  • cumin seeds-1tsp
  • fenugreek seeds-a pinch
  • dry red chilli - 2
  • curryleaves-2tbsp
  • sliced onion-1 large
  • chopped cucumber -1/2 cup
  • chopped brinjal-1/2 cup
  • capsicum -1/4 cup
  • green chilli -1
  • turmeric powder -1/4 tsp
  • red chilli powder-1/2tsp
  • sambar powder-1tsp
  • cumin powder -1/4 tsp
  • tamarind water-1/2 cup
  • salt to taste.
                       

Method

  • Heat a fry pan and pour oil.After oil gets heated add cumin seeds,mustard seeds, fenugreek seeds,curry leaves,dry red chillies.
  • Then add onion,greenchilli and saute it well until it become light brown colour.
  • Add all chopped vegetables ,turmeric powder,chilli powder,cumin powder,sambar powder,salt,small amount of water to cook vegetables.
  • Close the pan till the vegetables cook completely.
  • Once the vegetables are done,add the tamarind water and allow it to cook until the kari becomes thick.
  • Transfer the pulikari into the serving bowl.
  • Best side dish for coconut rice and ghee rice.
